If you know me you probably know I HATE leftover, yep that's right I dislike them so much I have to use a strong word. So when it comes to cleaning up meals I either make sure Frank can take it in his lunch at work. I let him think that I'm doing it to be nice but I'm really doing it to keep it out of the fridge…our little secret ;). So back to my leftover tip for rice.
I have been dabbling in freezer meals lately so I've been able to get pretty creative. I actually try to make a little extra so I can save it for another meal! I figure less prep and planning means more free time for me.
Rice – My Leftover Tip
I'm sharing this quick and easy tip to save you time and keep your fridge and freezer a little more organized! All you have to do is grab a muffin pan and place liners in each tin. Throw the pan into the freezer until frozen, it usually doesn't take long but I always forget and leave it in overnight. Once finished you can remove the pan from the freezer and pull the papers off of each rice “cake” and place them in your favorite freezer storage container.
If you have leftover vegetables like broccoli, peas, corn or almost anything else I've mixed them with the rice before and made rice veggies “cakes”. All you have to do when you're ready to use them is unthaw and heat and they're ready to go.
