I would make a beef roast with potatoes, carrots, onions, and celery. Always a bit hit in my house.

I would cook pulled chicken! Chopped Onions in the bottom, Lay chicken breast on top, pour barbacue sauce over all! simmer for 3 hours!!Yum!!!
