My favorite summer memories involving camping, campfires and spending time with my family and that’s how this recipe was born. I wanted to capture the fun loving days of summer and be reminded of the night sitting around the campfire laughing and sharing stories. I introduce to you my S’more Cupcake Recipe!
S’more Cupcake Recipe
For the graham cracker crust combine the following ingredients:
- 3 tablespoons butter, melted
- ¾ cups graham crumbs
- 2 tablespoons Nesquik chocolate powder
Combine ingredients and place a heaping teaspoon into 12 prepared muffin tins, flattening out to make a crust like bottom. Set muffin pan aside. Reserve leftover graham crumbs for later.
Now for the cupcake batter. Preheat oven to 350°F. In the bowl of an electric mixer, using the whisk attachment beat the following ingredients together:
- 1 egg
- 1 teaspoon vanilla
- ½ cup greek yogurt
- ¼ cup maple syrup
Add in the dry ingredients:
- 1 cup all purpose flour
- ½ cup Nesquik powder
- 1 ¼ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Using the whisk attachment on your stand mixer combine together at medium speed.
Once batter is combined, gradually add in ½ cup of water whisking until batter is runny, this will take a few minutes to get an even consistency. The batter will be thin and runny but that’s normal.
Using the prepared muffin tins place a teaspoon of batter on top of each graham crust. Next is a heaping teaspoon of marshmallow creme, then top that off with about a tablespoon of batter.
If the marshmallow creme is showing through the batter that is ok. The muffin tins will be almost full.
Sprinkle tops with remaining graham crumbs and bake in 350°F oven for 14 minutes. Let cool 10 minutes before removing cupcakes from muffin tins.
This recipe makes 12 cupcakes, so when preparing the topping keep that in mind so you have enough. For the s’more cupcake toppers break up graham crackers and chocolate pieces. Drizzle Nesquik chocolate syrup on each cupcake, followed by inserting one graham cracker and chocolate piece into each.
I chose Nesquik powder and syrup for this recipe because I always keep them on hand. The fluffy, light texture of the cupcakes combined with the graham crust and toasted marshmallow mimics a campfire s’more.
These s’more cupcakes are perfect any time of the year! Serve them with a side of fruit for a delicious treat. Kids and adults will love them.
