2 tablespoons butter
2 tablespoons flour
1/2 cup milk (whole is the best for creamy texture)
1/2 cup beer, your choice can even be alcohol-free
2 teaspoons Dijon mustard
1/2 teaspoon smoked paprika
2 oz cream cheese
8 oz sharp cheddar cheese, shredded
sea salt and black pepper, to taste
green onion, for garnish
pretzels, bread, pita, or whatever you'd like for dipping

Quick and Easy Dip Directions

Melt butter in a medium saucepan over medium heat
Add flour and cook, stirring constantly, for 1-2 minutes, just until the raw flour taste cooks out. It will turn into a thick paste
Slowly pour in the milk, stirring constantly
Continue cooking until the mixture thickens, 1-2 minutes
Stir in the beer, Dijon, and smoked paprika
Continue cooking for another minute
Stir in the cream cheese and sharp cheddar cheese
Continue cooking and stirring constantly until the cheese has melted
Taste and adjust the seasoning with salt and pepper, if needed
Transfer to a serving dish and top with fresh sliced green onion
Serve alongside your favorite food vessel for dipping
