    One Pan Creamy Garlic Penne Recipe

    When it comes to comfort food I love my carbs!  There is just something about the buttery goodness of homemade bread with a side of pasta that makes me smile.  For this recipe, I took my love of pasta, and the necessity of a quick and easy meal, and combined them to bring you this one-pan Creamy Garlic Penne recipe.

    One Pan Creamy Garlic Penne Recipe

    This recipe uses the pasta to thicken the sauce, leftover chicken and combines it with veggies and coconut milk to bring this delicious and creamy meal to your table in about 30 minutes!

    The secret?!  Homemade Penne in the Philips Compact Pasta Maker.  I'm in love with this machine. It takes about 10 minutes to make a batch of fresh pasta that feeds my family.  All you do is add the flour and water to the machine and let it do its thing!  You can let it make long Penne noodles and cut them at the end or cut it as it spits them out as I did for this recipe.

    For the pasta use the measuring cups provided – 1 scoop of flour (200g) and 70g of water.  It makes about 200g of pasta which for Penne is about 2 cups.  You can make your pasta before you start cooking or while you make the dish, either way works it just depends on your personal preference.

    Making Penne with Philips Compact Pasta Maker

    Now to start cooking!  We're going to heat our pan and add 1 tablespoon of oil follow by 1/2 an onion thinly sliced and 6 cloves of garlic diced.  Once the onions are soft add in 1 cup of diced gourmet mixed cherry tomatoes and cook a couple of minutes longer.

    Now add 2 cups of vegetable stock with your pasta and bring to a boil.  Once boiling reduce heat to medium and let cook 10 minutes.  While that cooks I washed the pasta machine, so I didn't have to do it later, it is easy to clean up as there isn't much left in the machine after it makes a batch of dough plus all the pieces come apart.  What took me the longest was cleaning out the penne machine head, I need to find a better way to tackle that.

    Now that the pasta has had a chance to soften add in 1.5 cups of coconut milk, 2 handfuls of spinach and 2 cups of shredded chicken.  Feel free to leave the chicken out if you are using the pasta as a side dish, or add your favorite protein this dish is versatile and will work with your flavor preference.  Cook on medium-low for another 10 minutes or until pasta is soft and the sauce has thickened to your liking.

    Serve and enjoy!  This made more than enough for two adults and two kids; we even had enough leftover for Frank to pack for dinner at work.

    Recipe notes – you can easily change the flavor by adding in some of your favorite spices or switching out vegetable stock for chicken or beef to match the protein in the dish.  I used what we had on hand for a simple recipe.  I also used coconut milk from a can; I like the creaminess it adds to the dish, I dump the can into my blender to combine the liquid with solid in the can, that's what I used in this recipe.

    A simple one pan recipe that combines fresh penne and vegetables in a creamy garlic sauce.

    Ingredients
      

    • 200 g fresh Penne pasta about 2 cups
    • 1 tablespoon coconut oil
    • 1/2 onion thinly sliced
    • 6 cloves garlic minced
    • 1 cup mixed cherry tomatoes diced
    • 2 cups vegetable stock
    • 1 1/2 cups coconut milk
    • 2 handfuls spinach
    • 2 cups chicken shredded

    Instructions
     

    • Prepare the fresh Penne using the Philips Pasta maker you'll need 200g flour and 70g water, once made set aside.
    • Heat a medium size pot or fry pan over high heat and add oil, once heated reduce to med-high adding onion and garlic. Sauté until translucent and then add the tomatoes cooking a few minutes longer.
    • Add in stock and pasta bringing to a boil, once boiling reduce heat and cook for 10 minutes.
    • Once penne is soft add in coconut milk, spinach and chicken cooking for 10 minutes or until sauce has thickened to your liking.
