Granola Parfait Ingredients
- 6 large dates, pitted
- 3 T natural almond butter
- 3 T honey
- 2 T coconut oil, melted
- 1 t real vanilla extract
- 1 c rolled oats
- ½ t ground cinnamon
- ¼ t. salt
- ¼ c raw almonds, roughly chopped
- 2 T sunflower seeds
- 2 c plain Greek yogurt
- 2 large bananas, sliced
- 1 c fresh strawberries, sliced
- 2 T chia seeds

Strawberry Banana Parfait Directions
- Preheat the oven to 350°F and line an 8×8” baking pan with parchment paper, leaving an overhang for easy lifting.
- In a food processor or blender, blend the dates, almond butter, honey, coconut oil, and vanilla until smooth and creamy.
- Transfer the date mixture to a large bowl and stir in the oats, cinnamon, salt, almonds, and sunflower seeds until everything is well coated.
- Press the mixture into the prepared pan in an even layer. Bake for 20 minutes, or until the top is golden and slightly toasted.
- Let cool completely. Then crumble into clusters—some large, some small—for that perfect granola texture.
- To assemble, layer Greek yogurt, granola, banana slices, and strawberries in mason jars or parfait glasses and top with chia seeds. Repeat layers and enjoy immediately!
