I had to share this fun, quick and super simple rice milk recipe for you. I didn't realize how easy it was to make a delicious glass of ready to serve rice milk at home! The ingredients are all easy to find and have on hand, if you use the WonderMill Grain Mill the cost of making your own rice milk at home is inexpensive.
If you purchase rice in bulk you can get it for around $1/lb, so this recipe that uses 1/2 cup of rice flour is about .20¢. Add on the other ingredients you are using and the total cost is about .25¢ compared to purchasing 32oz of ice milk at the store for $2.70 you are saving over $2!! To make 32 oz it takes about a minute to throw the ingredients into your blender and mix!
I used a Blendtec because I like how it uses the ice to cool down the milk instantly and it is ready to serve right out of the blender container. But I'm sure any blender would work or even a magic bullet!
- 2 cups water
- ½ cup rice flour
- 1 T coconut oil
- ¼ tsp salt
- ½ T vanilla
- 1 drop almond extract, if you choose
- ⅓ tsp stevia (or 1 tsp sugar)
- For chocolate flavor – 1 tsp cocoa powder
- Combine ingredients in blender and pulse until combined.
- Serve chilled
