Quick and Easy Cilantro Lime Rice

For me food prep is the key, making big batches one or two days a week helps us have quick and easy meals all week long.  I’ve found that having readily made healthy options on hand helps us easier better throughout the week, one of those things is rice.

Transform boring, basic rice into something extraordinary with the addition of a few fresh ingredients. In this quick and easy recipe, lime and cilantro are paired to create a classic flavor combination that brings added depth to your dishes.

Cilantro-Lime Rice Recipe

Cilantro-Lime Rice Ingredients:

  • 3 c. cooked rice*
  • 3 T. fresh lime juice
  • 2 t. lime zest
  • 3 T fresh cilantro, chopped
  • Salt and black pepper, to taste

You can use white, brown, or jasmine rice. (Brown rice is shown in the images).  In the images I’ve featured the recipe for Mexican slow cooker chicken, it is a family favorite and easy to make.

Cilantro-Lime Rice Directions:

  1. Prepare rice according to package directions.
  2. Fluff cooked rice with a fork and stir in fresh lime juice, lime zest, and cilantro until blended. Season with salt and black pepper, to taste, and serve immediately.

If you want to switch things up when it comes to boring rice this recipe is a great place to start and can be served with dishes like shredded Mexican chicken or added to a salad bowl.  Yum!

*Brown rice was used in recipe images, you can use whichever rice you prefer.
