With our family goal of making healthier choices and trying new foods, we've been getting creative in the kitchen! I wanted to share a new favorite with you – Sweet Potato Chickpea Burgers! They're quick and easy to make, taste delicious, and are kid-approved.
We combined our love for sweet potatoes and chickpeas and made it into a burger! The fun part is you can shape them any size you want and they take about 30 minutes to whip up.
All you need are these four ingredients:
- 1 cup mashed sweet potato
- 2 cups chickpeas
- 1 cup flour (gluten free, whole wheat, anything works)
- 1 flax egg (1 tablespoon ground flax & 3 tablespoons water)
Combine ingredients in a food processor and you're ready to form the patties! It really can't get any easier! You can make the patties and shape and size you want, for these pictures I used small ciabatta buns so made smaller patties. When you cook the burgers they won't change much in size, if anything they'll fluff up a bit.
Place the patties in your Philips Airfryer tray and get ready to bake them!
If you don't have an Airfryer you can either pan fry these in your favorite oil or bake them in the oven at 425°F for about 20 minutes.
The Philips Airfryer is a countertop appliance that drastically reduces the amount of oil used to cook. Using Rapid Air Technology, the Philips Airfryer allows you to fry, bake, grill, broil, braise and caramelize.
Insert the tray, set the temperature to 200°C and the timer for 10 minutes! Let the Airfryer do the rest of the work for you. While that's cooking get your topping ready, some of the topping we like are:
- avocado
- cucumbers
- tomatoes
- cheese
- lettuce
I love the texture the Airfryer gives the burgers, they're nice and crunchy on the outside but super soft on the inside. If I had to compare it to something I would say it is similar to breaded, deep fried chicken strips.
Assemble your sweet potato chickpea burgers! I love mine with a little ranch and hot sauce topped with cheese and cucumbers, the kids like a little ketchup and lettuce and Frank likes a little bit of everything. These burgers are a huge hit in the house and great for packing in lunches or freezing to have on hand for a meal in seconds!
Quick and Easy Sweet Potato Chickpea Burgers
Ingredients
- 1 cup mashed sweet potato
- 2 cups chickpeas
- 1 cup flour gluten free, whole wheat, anything works
- 1 flax egg 1 tablespoon ground flax & 3 tablespoons water
Instructions
- Thoroughly combine ingredients in a food processor
- When combined form into patties to fit your buns
- Cook in Philips Airfyer at 200°C for 10 minutes or 425°F in oven for 20 minutes.
If you want to switch things up a little you can add spices or even other minced veggies to the patties before you bake them. As long as you follow the basic sweet potato chickpea ingredient list and add to suit your taste preference you can't go wrong!
