I’ve included three different variations that we like but feel free to experiment with your favorite flavor combinations.  Start with the basic chia pudding recipe and then take it from there.

Quick and Easy Chia Pudding Recipe

    Chia Pudding Ingredients:

    • 1 cup coconut milk
    • 3 Tbsp chia seeds
    • 1 tsp Stevia
    • 1 tsp vanilla extract
    Cinnamon Blueberry Chia Pudding

    Cinnamon and Blueberry

    • ½ tsp cinnamon
    • ½ cup blueberries
    • 1 tbsp shredded coconut
    Choco Berry Chia Pudding

    Choc Berry

    • 1 Tbsp cacao (raw cocoa or use unsweetened cocoa powder)
    • ½ tsp cinnamon
    • ½ cup blueberries
    • ½ cup strawberries
    Banana Berry Parfait Chia Pudding

    Banana Berry Parfait

    • ½ tsp cinnamon
    • ½ cup blueberries
    • ½ banana, sliced
    • 1 tbsp shredded coconut

You’ll find these kitchen tools useful (I've included affiliate links to the products I use at home):

    • Mason Jars – great for food prep and storage
    • Large Measuring cup – great for mixing and dividing into containers
    • Whisk – a kitchen essential, I prefer silicone so it can be used in pots but a metal whisk is great for this too

Quick and Easy Chia Pudding Recipe

    Chia Pudding Directions:

    1. In a mixing bowl, mix coconut milk, vanilla extract, and stevia until well combined. If using cocoa in your recipe now is the time to add it.
    2. Add chia seeds to a jar pour over coconut milk and whisk well.
    3. Put in the refrigerator to set (minimum 2 hours).
    4. Before serving add your toppings. Enjoy!

I hope that you enjoy this quick and easy chia pudding recipe as much as I do.  It became a go-to breakfast recipe of mine and I will even grab a jar on my way out the door on busy days so I can have breakfast on the go.
