Instant Pot Creamy Mashed Red Potatoes

Making a big meal can be time-consuming, especially when you’re trying to cook a bunch of things at once.  I found a way to save time and not worry about my potatoes getting cold with this quick and easy mashed red potato recipe.

I know there are a lot of multi-cookers on the market and this recipe will work with any of them. One of my favorites is the Mealthy Pot because of price point and ease of use but in all honesty, they all do the same thing it just comes down to personal preference and the size you want.

Instant Pot Creamy Mashed Red Potatoes Ingredients:

  • 2 lbs. red potatoes, washed and cubed
  • 3-4 cloves garlic, peeled and chopped
  • 1 c. chicken or vegetable broth
  • Sea salt and black pepper, to taste
  • 4 oz. cream cheese, cut into chunks

You’ll find these kitchen tools useful (I've included affiliate links to the products I use at home):

  • Obviously an Instant Pot, the instructions are for the IP-Duo series, other models may offer different features or buttons.
  • Immersion blender, this works great for making the potatoes creamy but if you don’t have one a potato masher will do the trick.

Instant Pot Creamy Mashed Red Potatoes Directions:

  1. Place potatoes, garlic, and broth in Instant Pot. Season with salt and black pepper, to taste.
  2. Add the lid and flip pressure valve to “Sealing” position. Select the “Manual” option and adjust the setting to “high.” Set cook time to 8 minutes. When finished, allow pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
  3. Carefully open the lid and add cream cheese. Mash potato mixture with a potato masher or an immersion blender until blended, but not completely smooth. Season with additional salt and black pepper, to taste, and serve immediately. Enjoy!

I don’t know why I didn’t try this recipe sooner because this is the easiest way I’ve ever made mashed potatoes and I have the burner free to cook other side dishes.  If you want to add more flavor to the dish adding spices during the cooking process is simple and with the pressure cook feature the flavors really pop!
