Finally I can sit down and write about my the cupcakes I attempted and succeeded at making!! At first I was thinking what did I get myself into (if you follow me on Twitter you would of seen my “wish me luck” tweet) and thought I'd be making a second batch of cupcakes.
It started like this:
I had all the ingredients out and was ready to roll, I woke up at 6 so I could get it done before the party, thinking I would have enough time to quickly make a second batch. I always have to have a back up plan, the party was at 10 am so I figured I had more than enough time. The mixing was fine just follow the directions on the box and away I went!
Then pouring the batter:
This proved to be a little trickier than I thought, there were so many mixed reviews online of what method to use – pour into cones or pour into papers and put cones on top – I figured this would be the least messy of the two options. I usually pour right out of the mixing bowl into the papers but that doesn't work so well with cones so used a gravy scoop to do them all.
Then for the moment of truth to put them in the oven, all the things I read online said don't fill the cones too full or you'll have a mess when it bakes. I was least worried about a mess and more worried about the cones lighting on fire, like seriously can you imagine what that would of been like especially if I had to call the fire dept, my husband who is a fire fighter would have a heart attack. I figure if all went for shit Frank would probably never let me use the oven again which might turn out to be a good thing! Always see the bright side!!
So it was the time of truth to take them out of the oven:
Not too bad for my first attempt if I do say so myself. I figure they turned out good enough all the need is a little decoration and we're good to go! So I give you my first attempt at making ice-cream cone cupcakes:

Pretty proud of myself to say the least. For those of you who know me when I was younger I could actually burn raw rice – if that's even possible – so this is leaps and bounds from where I was a while back. If I have to make these again I'm going to try the other method of filling the paper liner then putting the cone upside down on top of them, so I'll be sure to share the results!
