Hot Chocolate Thumbprint Cookie Recipe

When I was in elementary school we had sleepovers at my Grandparent’s every weekend and I remember baking with my Grandma.  Spending time with her in the kitchen is something that I will always treasure. This Hot Chocolate Thumbprint Cookie Recipe is a throwback to those days!

I created this recipe with that memory in mind so they’re like a warm hug on a cold day! The Carnation Hot Chocolate was the perfect addition to the recipe since it is made with pure cocoa it brings out the rich chocolate flavor in the cookies.

Hot Chocolate Thumbprint Cookie Recipe

Step 1 – Preheat oven to 375°F.  In a medium-sized bowl using a whisk cream together:

  • ⅓ cup melted butter
  • ½ cup brown sugar
  • ½ cup Carnation hot chocolate powder
  • 1 egg
  • 1 tablespoon hot water
  • 1 teaspoon of vanilla

Step 2 – Combine these dry ingredients in a small bowl:

  • 1 ⅓ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips

Step 3 – Add the dry ingredients to the wet and stir until combined.  Set aside and slice 7 large marshmallows in half.

Step 4 – Using a cookie scoop measure out 14 cookies (or however many you get from your batch) onto a prepared cookie sheet.

Step 5 – Roll each scoop into a ball and using your thumb make a thumbprint in each cookie and place a slice of marshmallow in each.

Final Step – Place cookies in the oven and bake for 10-12 minutes, you want the marshmallows to be golden brown and the cookies to still be soft.  Let cool on the pan for a few minutes before serving.

What I like about this recipe is the tender chocolatey cookies with the soft marshmallows on top.  The hot chocolate powder gives these cookies the perfect rich yet creamy flavor.  Pair them with your favorite fruit for an afternoon snack.

These cookies are best eaten warm, so if you don’t enjoy them while they’re warm pop them in the microwave for 5-10 seconds to enjoy the melted chocolate goodness.
