I like to bake but rarely find the time to do it, so anything I make is always a special treat. This Fudge Brownie Bites recipe was a fun inspiration on a few of the favorite things in our house, I hope you enjoy it as much as we do.
This recipe is simple and takes less than 10 ingredients to make. I like how the Nesquik is easy to use and gives them a rich flavor. Let’s get baking!
Fudge Brownie Bites Recipe
First up we’re going to combine the dry ingredients:
- 1 ¼ cup flour
- ¾ cup Nesquik chocolate powder
- ½ tsp salt
I used a stand mixer but you can easily mix these in a bowl and use a whisk to combine to add some extra air to the batter. After stirring the dry ingredients to evenly combine it is time to add the wet ingredients:
- 1 ¼ cup Nesquik chocolate syrup
- ¼ cup vanilla greek yogurt
- 1 egg
Stir until all ingredients are combined and you have a mixture that is thick but still runny, it should coat the beater but excess should easily drip off. If you find the batter is too thick just add a little water.
To give the brownie bites a different flavor you can swap out the vanilla greek yogurt for one of your liking. At this point you can either add in ¼ cup of chocolate chips or reserve them to place on top, by adding them to the batter they’ll melt on the inside and give you little pockets of melted chocolate.
Using a 24 capacity mini muffin pan, place a heaping teaspoon full of batter into each tin. If you skipped adding the ¼ cup of chocolate chips to the batter now you can divide them amongst the brownies and sprinkle on top. Dustin likes them on top because they resemble dinosaurs! If you prefer to skip the chocolate chips you can or insert a raspberry into each brownie bite before baking.
Bake at 350°F for 15 minutes or just until they’re under done, you want the insides to be a little gooey, that brings out the fudge flavor when you bite into them.
A batch of these doesn’t last long in our house, Dustin loves these Fudge Brownie Bites on their own or with a side of fruit because they’re the perfect snack size!
