Freezer Meals to Prep Before School Starts

Imagine this: Future you is giving present you a big ol' high-five for that one Saturday spent stocking up on freezer meals. Seriously, there's nothing quite like the feeling at 5 pm on a crazy Tuesday when all you've gotta do is grab dinner from the freezer and pop it in to reheat. It's like your past self left a little gift for your future self!

Plan the Lineup

Let's talk about those go-to recipes that your family will happily devour time and time again. You know, the ones that are simple to whip up and make for awesome leftover lunches. In our house, we've got a few favorites on repeat:

  • Sheet pan fajita packs. Grab peppers, onions, and chicken—slice them easily. Toss with your favorite seasonings and store in Ziploc bags for the freezer. When ready to eat, pour onto a tray, roast until sizzling, and serve with warm tortillas.
  • Lasagna roll-ups. Spinach-ricotta filling all snugly rolled up in noodles. It's like portion control made simple! Just pop those bad boys into a baking dish, slather on some red sauce, and you're ready to reheat.
  • Breakfast burritos. Srambled eggs, sausage, hashbrowns, salsa, and cheddar wrapped in tortillas freeze like a dream and double as dinner when practice runs late.
  • Dump-bag chili. Beans, ground turkey (or lentils), diced tomatoes, spices, simply freeze raw and dump into the Instant Pot when you get home. I keep garlic bread in the freezer to throw in while the chili cooks.
  • Hawaiian Meatballs. Choose fresh meatballs over processed ones. Simply combine flash-frozen meatballs, pineapple chunks, red pepper slices, and sweet and sour sauce in a Ziploc bag. When ready to cook, dump everything into your Instant Pot. Serve over rice for a meal that will impress even the pickiest eaters!

Storage Hacks

Let me spill the beans on a few nifty tricks I've picked up over time for mastering freezer meals. Trust me, these little gems can be lifesavers on those hectic days when you're juggling a million things!

  1. Freeze meals flat on a cookie sheet so they'll stack once frozen, and they're easy to pull out and use
  2. Label ziploc bags with cooking instructions and date
  3. Add paper between layers of burritos to prevent sticking, or wrap in parchment paper for easy grab and go
  4. Keep an inventory of your freezer meals, that way you know what you have on hand when in a pinch

Assembly Party

Did you know you can whip up and freeze ten meals in just two hours? Yep, it's totally doable with a little help from your mini sous-chefs. Kids are surprisingly awesome at prepping when they've got the right instructions and tools. So, arm them with:

  • Gallon Ziploc bags
  • Bag Stand (game changer)
  • Sharpies

While you're busy gathering all those ingredients, get the kids to help out by prepping the bags. That way, when you're ready to roll, all you gotta do is dump everything in and seal it up!
