Simple Sheet Pan Egg Bake Recipe

  • 6 eggs
  • ½ cup almond milk
  • 1 tsp smoked paprika
  • 6 oz ham, thinly sliced and diced
  • ¾ cup mushrooms, sliced
  • 1½ cups baby spinach
  • 1 red onion, diced
  • salt, to taste
  1. Pre-heat oven to 375°F
  2. In a mixing bowl add eggs, milk, salt and paprika.  Whisk until well combined. Set aside.
  3. On a parchment lined baking sheet add ham, mushroom, spinach an onions.  Spread evenly across the pan, pour egg mixture over ingredients.
  4. Bake for 20 minutes, remove from oven and let rest for 5 minutes before cutting and serve.  You can refrigerate leftovers for 3-4 days.
